Course Description

Because nutrition is an evolving science, this course includes a plethora of topics and controversies raised in the field. Obesity and diabetes are at epidemic proportions, and the detrimental effects on the health of adults, children, and teens are global. Food safety is a paramount issue today. This course gives recent information on all those topics and includes information about nutrition trends, nutrients, health claims of supplements, world hunger, nutrition, and sustainability.

Goals

  • Become familiar with up-to-date information by presenting current topics of information based on scientific evidence.
  • Become familiar with nutrition education and health promotion concepts.
  • Become familiar with interventions, strategies, and resources pertinent to school-age children.
  • Recognize major nutrition-related problems of children and youth.
  • Understand relationships between nutrition and growth and development during childhood and adolescence.
  • Understand psychological, social, cultural, and familial factors influencing food behavior and intake.
  • Understand how physical activity patterns of children and adolescents and how those factors affect food choices and nutritional needs.

Evidence of Learning Outcomes

Upon completing Food and Nutrition in the 21st Century, the student will have demonstrated knowledge of current nutrition topics.

How to Register

Food and Nutrition in the 21st Century can be completed in either an online or via emailed PDF format. It is open for anyone to register at any time during an open semester. After completion, students receive graduate, non-degree semester credit on official transcripts from the University of La Verne, an accredited university in La Verne, California. 

Registration is fast and straightforward and can be done online or over the phone. Courses are offered on a rolling basis during three standard semesters, and you can begin whenever you are ready! The registration dates are:

  • Fall: September 1 - January 31
  • Spring: February 1 - May 31
  • Summer: June 1 - August 31
